Coquito is a traditional Puerto Rican libation that is enjoyed throughout the holidays. It is made with coconut milk, spices and rum and it packs a delicious little punch. I have an easy coquito recipe that I want to share with y’all.
Some people refer to this as Puerto Rican eggnog, but it has little similarities to eggnog other than the creamy color to it. And this recipe does not use eggs in it whatsoever, although, I have seen some coquito recipes that add egg yolk.
The longer the coquito sits in the refrigerator the more potent it will become, and it will keep for 3 months. We like to keep ours in the freezer and because there is rum in it, it won’t completely freeze. But who actually has coquito left after 3 months?
You simply add all of the ingredients into a blender (like THIS ONE) with the exception of the cinnamon sticks and blend on high for 3-4 minutes. The cinnamon sticks are for garnishment only. Make sure to let the coquito refrigerate for at least 1 hour before serving.
The coquito will separate a little as it sits so make sure to give your bottle a good shake before pouring it into serving glasses. And because it is made with coconut there will be a little bit of texture to the drink. Sprinkle a little more cinnamon on top, add a decorative cinnamon stick and enjoy responsibly!
I love these COCKTAIL GLASSES to serve this holiday libation in and THIS is the blender we use. Store your coquito in these CUTE LITTLE GLASS BOTTLES or give some away as gifts!
