Ring in the New Year with this black-eyed pea soup with collard greens and sausage. You will be destined to have good luck and fortune in the upcoming year!

Eating black-eyed peas and collard greens on New Year’s is a long-standing southern tradition that is believed to have originated in Africa. Consuming those tasty little peas and hearty greens will supposedly bring a year’s worth of good luck or monetary gain.

I don’t know about you, but I can always use some extra luck in that arena! Plus, this soup is out of this world flavorful.

I find this collard and black eyed pea soup to be quite healthy because its high in protein and fiber (thank you B.E.Ps) and the collards provide you with many vitamins. Vitamins A, C, K, Calcium, Potassium, Folate and antioxidants are found in collards so go ahead and eat up!

New year’s soup

Ingredients

  • Onion
  • Celery
  • Carrots
  • Garlic
  • Andouille sausage
  • Black eyed peas
  • Collard greens
  • Broth
  • Diced tomatoes
  • Potatoes

There are many different brands and types of andouille sausage floating around in the stores. My favorite brand is Richards because I think its absolutely delicious for this black-eyed pea soup with collard greens and sausage.

If you want to make this a vegetarian soup, then try using a plant-based sausage or omit the sausage altogether. It is still quite fantastic.

Ingredients

Fresh vs dry B.E.Ps

I use fresh BEPs whenever I can find them in the store and that is usually around New Years. But if you can’t find them the dry black-eyed peas will work just fine in this recipe. Just remember that you will need to soak them the night before in a pot of water.

Instructions

  1. Saute the onions, celery, carrots, garlic and sausage then add the diced tomatoes, broth, BEPs and collard greens. Let that simmer for about 20 minutes, covered.
  2. Add the potatoes and adjust the seasoning adding salt, pepper or red pepper flakes (if needed). Simmer with the lid on for 30 minutes.

BLACK EYED PEAS ON COLLARD GREENS SOUP (NEW YEARS SOUP)

My black-eyed peas and collard green soup is so easy to make and takes an hour to cook up. Its full of traditional southern flavor and will hopefully bring you good luck and fortune for the upcoming year. It is naturally gluten free and can be made vegetarian by simply omitting the sausage.

Ingredients
  

  • 1 tbsp Extra virgin olive oil
  • 1 cup Onion diced
  • 1 cup Celery diced
  • 1 cup Carrot diced
  • 3 clove Garlic
  • 16 oz Andouille sausage diced
  • 10 oz Black eyed peas fresh and washed
  • 8 oz Collard greens chopped, stems removed
  • 4 cup Broth chicken or vegetable
  • 14 oz Diced tomatoes 
  • 2 med Potatoes diced
  • Salt to taste
  • Pepper to taste
  • Red pepper flakes to taste

Instructions
 

  • In a large soup pot on medium heat add olive oil and saute the onion, celery, and carrots for 3 minutes. Add andouille sausage and saute for 3 minutes more.
  • Add the garlic, black eyed peas, collard greens, diced tomatoes and broth. Bring to a boil and then reduce heat to low. Cover the pot and simmer for 15-20 minutes.
  • Add diced potatoes, cover and simmer for 25 minutes more.
  • Taste the soup and add salt, pepper or red pepper flakes (if needed).
