This easy brioche French toast casserole is a new favorite in our home. It consists of sliced and layered brioche bread covered in a cinnamony custard and then baked to perfection in 40 minutes. To make life easier, this can even be prepared ahead of time or the night before.
You can top your casserole with a mixed berry compote, powdered sugar or maple syrup. I have included the recipe for the mixed berry compote in the recipe card and it only requires 3 ingredients.
This French toast casserole can feed a crowd by using a whole loaf of bread or it can be turned into a brunch for 3 by cutting the measurements in half. It’s absolutely perfect for a holiday breakfast meal because you can prepare everything the night before.
Trust me when I tell you that this recipe couldn’t be any easier which is truly what we need in the morning before we have had our coffee. Easy breakfast casseroles rock in my opinion!

Ingredients
- Brioche bread
- Eggs
- Milk
- Vanilla
- Cinnamon sugar
- Salt
- Mixed berry compote
- Frozen berries
- Sugar
- Xanthan gum (thickener)
Xanthan gum is a thickener, but cornstarch or arrowroot powder can be substituted. Consequently, the measurements may be different so start with a small amount and add as needed.
How to make brioche French toast casserole
- Cut the brioche into cubes or triangles and then layer inside a greased or buttered casserole dish.
- In a large bowl whisk together the eggs, milk, vanilla, salt and 2 tsp cinnamon sugar. Pour over the brioche and using a spoon try to cover all of the bread with the custard mixture.
- If making overnight French toast casserole, then cover and place in refrigerator for future use.
- Bake for 40-45 minutes in a 350-degree F oven.
- Just before serving top with mixed berry compote, maple syrup and powdered sugar.
Storing/Reheating
If you are making this an overnight French toast casserole then add the custard to the cubed bread and then store in the refrigerator, covered. Set out on the counter when the oven is preheating and cook uncovered for 45-50 minutes.
French toast casserole is best when eaten the day it is made. With that being said, it can be stored in an airtight container for 2 days and reheated in the microwave.

BRIOCHE FRENCH TOAST CASSEROLE
Equipment
- 1 Casserole dish
Ingredients
- 1 loaf Brioche bread sliced or cubed
- 6 Eggs
- 1 cup Milk
- 2 tsp Vanilla extract
- 3 tsp Cinnamon sugar
- pinch Salt
Mixed berry compote
- 2 cups Frozen mixed berries
- 1 tbsp Sugar
- 1 tsp Xanthan gum
Instructions
- Spray the bottom and sides of casserole dish with cooking spray. Cut brioche into cubes or triangles and layer inside casserole dish.
- In a large bowl whisk together the eggs, milk, vanilla, salt and 2 tsp cinnamon sugar. Pour over the brioche and using a spoon try to cover all of the bread with the custard mixture. Set aside.
- Preheat oven to 350 degrees F.
- Sprinkle remaining cinnamon sugar on top of the casserole and bake for 35-45 minutes. Time will vary depending on how deep the casserole dish is.
Mixed berry compote
- In a medium sized saucepan over medium-low heat add the frozen berries and let simmer covered for 10 minutes.
- Add the sugar and Xanthan gum and stir until it reaches desired consistency, adding more gum if needed.
