I just love this Creamy Cajun Salmon recipe especially when it’s served over pasta. This is a very filling and hearty meal that can easily be made into a low carb dish by simply omitting the pasta. By itself, it contains only 8 net carbs!

I chose a simple medley of onion, bell pepper, mushrooms, tomatoes and garlic and then added half and half, Cajun seasoning and parmesan cheese to produce a creamy and well-seasoned sauce. Therefore, this dish is very flavorful and rich. Adding spinach would be great in this dish too.

My creamy Cajun salmon takes 30 minutes to make and can be served by itself or with pasta, Palmini (angel hair) noodles, rice or cauliflower rice. As a matter of fact, it also makes great leftovers for the next day. Winning!

The noodles are made with hearts of palm and work well in creamy dishes like this recipe or in my fish coconut curry recipe. Just boil them for 10 minutes or so, drain and add to your sauce.

You can remove any of the vegetables in this creamy Cajun recipe especially if you are trying to lower the carb count. On the other hand, you can add additional veggies too.

Instructions for Cajun salmon

  1. I like to prep my vegetables first because this meal comes together quickly. Slice the onion, pepper and mushroom. Peel garlic and then set aside. Season the salmon with a small amount of salt and pepper.
  2. Heat 1 tbsp Olive oil in a large skillet over medium heat. Add salmon and sear 3 minutes per side, or until golden. Remove to separate plate.
  3. In same skillet sauté onions, peppers and mushroom for 4 minutes. Add tomatoes, Cajun seasoning and garlic. Sauté for 1 minute.
  4. Next, add half & half or heavy cream, stir and reduce heat to low. Simmer for 3 minutes.
  5. Place salmon into sauce and put the lid on skillet. Cook for 5-7 minutes or until salmon flakes apart.
  6. Add parmesan cheese and parsley. Serve over pasta or cauliflower rice.

Frequently asked questions

How long do I cook the salmon?

The cook time for creamy Cajun salmon will vary depending on the thickness of the filet. 125 degrees F in the thickest part of the filet is what you are going for if using a digital meat thermometer. You can also stick a fork or knife into the center of the salmon filet and peek inside. If the center is flaky then it’s done, if it is dark pink inside then it still needs to cook.

Do I need to remove the skin from the salmon for this recipe?

No. If you leave the skin on, just pan sear the skinless side only and then remove it to a plate until the sauce is complete. Then simply place the salmon back into the sauce (skin side down) put the lid on and let it simmer until done.

How long will leftovers keep in the refrigerator?

Technically, 3 days. I personally don’t like leftover seafood past 1 day. I ate the leftovers to this meal for dinner the next evening and it was delicious but don’t cook it too long in the microwave. The fish becomes dry and rubbery.

How can I make my own Cajun seasoning?

3 TBSP Paprika, 2 TBSP salt, 2 TBSP garlic powder, 2 TBSP Italian seasoning, 1 TBSP cayenne pepper (or more if you want it spicy), 1 TBSP thyme, 1 TBSP onion powder and 1/2 TSP celery salt.

Can I make this with a different type of fish?

YES! This creamy Cajun sauce recipe will be delicious with any type of fish or shrimps, scallops or lobster.

This is a creamy and delicious sauce that pairs nicely with salmon and served over pasta. This recipe is not spicy. The addition of 1/2-1 tsp red pepper flakes or cayenne will increase the spice level. This sauce would also work well with shrimp, fish or scallops.
For KETO diet, substitute heavy cream for the half & half and serve with Palmini or cauliflower rice. 8 net carbs.

Ingredients
  

  • 1 tbsp Olive oil
  • 1 lb Salmon skin removed
  • ¼ cup Onion any variety
  • ¼-½ cup Bell pepper any variety
