Slice onion, pepper and mushroom. Peel garlic, set aside. Season salmon with a small amount of salt and pepper.
1 lb Salmon, ¼ cup Onion, ¼-½ cup Bell pepper, 1 cup Mushrooms, Salt/pepper
Heat 1 tbsp Olive oil in a large skillet over medium heat. Add salmon and sear 3 minutes per side. Remove to separate plate.

In same skillet saute onions, peppers and mushroom for 4 minutes. Add tomatoes, cajun seasoning and garlic. Saute for 1 minute.

Add half & half or heavy cream, stir and reduce heat to low. Simmer for 3 minutes.

Add parmesan cheese and stir until combined. Place salmon into sauce and put lid on skillet. Cook for 5-7 minutes or until salmon flakes apart.

Garnish with parsley. Serve over pasta or cauliflower rice.
