This Summer Berry Salad recipe is an homage to warm summer days. Sweet succulent berries, candied pecans and tangy feta cheese creates a beautiful symphony of flavors.

I’m going to share with y’all one of my favorite salad recipes. This summer berry salad satisfies that sweet and salty craving we all get from time to time. Its light and refreshing which makes it perfect for warm days.

Summer is just around the corner and that means it’s time to box up the winter clothes. Time to make room for tank tops, flip flops and shorts in my closet. It’s a small closet, unfortunately.

Time to start spending weekends on the lake, taking trips to the beach and the not-so-fun yardwork. I know, it’s necessary but still. I’d much rather be a beach bum then a sweaty filthy lawn mowing, weed-picking gal.

The last thing I want to eat after being outside in the warm sun is a heavy meal. Frolicking outdoors always works up a healthy appetite. Salads and sandwiches are generally my go-to for a satisfying lunch. They are quick and simple to prepare, and I enjoy eating them outside on my deck.

It’s healthy!

This summer berry salad recipe is the definition of summer in a bowl, and I use strawberries and blueberries for this recipe. Berries are very healthy for you as they are loaded with antioxidants and vitamin C. I’m a big fan of the spring mix of lettuces that you can get at the grocery store and coming soon to my garden. Baby spinach is a good choice too.

The addition of nuts adds healthy fats to this salad and a wonderful crunch as well. Feel free to use any nut you like, and you don’t need to use a lot. I am partial to candied pecans or walnuts, but I’ve made this with pistachios and it’s still quite delicious. Pepitas are also a nice addition as a topping and are lower in fat.

The only cheese I would add to this salad would be feta or goat cheese and sparingly. The saltiness and tanginess of the cheese is key in balancing out the sweetness of the berries.

The addition of a grilled chicken breast or salmon filet makes this a perfectly balanced meal.

Balsamic vinaigrette

A small amount of a simple balsamic vinaigrette completes this masterpiece. I make my own homemade dressing so I can control what goes in it.

  • 1 tbsp Balsamic vinegar
  • 1 tsp Dijon mustard
  • 2 tbsp Extra virgin olive oil or MCT oil
  • Dried oregano (just a sprinkle)

This salad is made with fresh blueberries and strawberries and your choice of salty feta or goat cheese and topped with sweet and tangy homemade balsamic vinaigrette. Add Chicken to increase the protein in this dish.

Ingredients
  

  • 2 cups mixed greens
  • 3 strawberries large, sliced
  • ¼ cup blueberries
  • 1 oz feta or goat cheese crumbled
  • 1-2 tbsp candied pecans
  • 1-2 tbsp balsamic dressing

Instructions
 

  • Add all ingredients in a bowl and mix well. Enjoy!
