It’s officially the first day of fall so that means there will be an assortment of pumpkin drinks and pumpkin cakes everywhere you look! I honestly do like pumpkin but I’m not one of those people that go crazy for everything pumpkin. You know who you are, no judgement here though. My baked oatmeal makes for a healthy and hearty breakfast and its great re-heated. This is a wonderful meal prep breakfast, just pop it in the microwave for a minute and top with yogurt, whipped cream, peanut butter or honey. You can even enjoy it with your pumpkin spiced latte.

This recipe for pumpkin baked oatmeal produces a dense cake-like breakfast. I added glazed walnuts to add a little pop on top, but I also like topping mine with dollop of vanilla yogurt.

Pumpkin baked oatmeal

Ingredients

  • Rolled oats
  • Sweetener i.e Swerve/ sugar/ monk fruit
  • Milk or milk substitute
  • Baking powder
  • Pumpkin puree
  • Pumpkin pie spice
  • Eggs
  • Vanilla
  • Chia seeds/coconut flakes (optional)
  • Walnuts/Pecans/pepitas (optional)

You can cater this recipe to suit your dietary needs. This pumpkin baked oatmeal recipe is not very sweet because that’s how I like it. Please feel free to add more sweetener if you tend to like it that way.

I use rolled oats because they are thicker than quick oats and, in my opinion, have a better texture. Using quick oats in this recipe would be fine but I have not tried any of my baked oatmeal recipes with steel cut oats. Therefore, I do not recommend steel cut oats in this.

Any type of milk will be fine in this pumpkin pie baked oatmeal recipe. I use whatever I have on hand. I have made it with 2% milk, unsweetened almond milk and soy milk before. If you are using sweetened milk (soy, coconut, almond) then lower the amount of sugar added to recipe.

Make sure to use 100% pumpkin puree in this recipe, not the pumpkin pie filling.

Instructions for pumpkin baked oatmeal

Time needed: 1 hour

Pumpkin baked oatmeal instructions

  1. PREPARE

    Combine the dry ingredients in a large bowl. Set aside.
    Combine the wet ingredients in a bowl.
    Preheat oven to 350 degrees F.
    Spray a 9×9 baking dish with cooking spray.

  2. MIX

    Add the wet ingredients to the dry ingredients and mix well. Pour into greased baking dish. Top with pepitas and nuts.

  3. BAKE

    Bake uncovered for 40-45 minutes or until knife comes out clean when placed into center of oatmeal.

  4. SERVE

    Top with yogurt, whipped cream, peanut butter or honey.

Ingredients
  

  • 2 cups Rolled oats
  • ¼ cup Sugar Swerve, Monk fruit, sugar
  • 1 tsp Baking powder
  • 1 tsp Pumpkin pie spice
  • ½ tsp Salt
  • 1 tbsp Chia seeds optional
  • 1 tbsp Coconut flakes optional
  • 2 each Eggs whisked
  • 1 cup Milk product unsweetened
  • 1 tsp Vanilla extract
  • 1 cup Pumpkin puree
  • 3 tbsp Pepitas topping
  • 3 tbsp Walnuts/Pecans topping

Instructions
 

  • Preheat oven to 350 degrees F. Spray 9×9 baking dish with cooking spray.
  • In a large bowl, combine dry ingredients and mix.
    In a medium bowl combine the wet ingredients and whisk to combine.
  • Add the wet ingredients to the dry ingredients and stir well to combine. Pour into greased baking dish. Top with pepitas and nuts.
  • Bake, uncovered, in oven for 40-50 minutes or until a knife comes out clean when stuck into the middle of the oatmeal.
