I absolutely love this jerk chicken chopped salad! The flavors are sweet, semi-spicy and very bold. The colors remind me of the tropics and make me long for a vacation to the islands. Make this deliciously refreshing Jerk Chicken chopped salad for lunch or dinner in 30 mins or less.

I had leftover BBQ jerk chicken from the night before so that made this a quick salad prep. Sometimes I cheat and use a pre-made jerk seasoning mix, you can find them at the grocery store or on Amazon.

A store-bought rotisserie chicken would also work great here, just pull it off the bone, sauté in a skillet with oil and sprinkle jerk seasoning on it.

GRILL CHICKEN

Grill the chicken at 450 degrees for, roughly, 15 minutes. The temperature of the chicken needs to be 165 degrees when measured in the thickest part. I highly recommend using this digital thermometer; it works great and is very affordable.

HONEY LIME VINAIGRETTE INGREDIENTS

  • Honey
  • Lime
  • Vinegar
  • Dijon mustard
  • Oil
  • Salt/pepper/garlic powder

You can whisk up the honey lime vinaigrette while the chicken is on the grill and chop up the fruit and veggies. MCT oil is a great base for salad dressings, and it is more easily digested. There are many health benefits to using MCT oil. It can give you an energy boost and help improve athletic performance. It’s not just for coffee y’all!

  • Chicken
  • Romaine lettuce
  • Cabbage
  • Pineapple
  • Red bell pepper
  • Cucumber
  • Avocado
  • Green onion
  • Shredded carrots
  • Cilantro
  • Honey lime vinaigrette

Jerk marinade recipe

This is a wonderful recipe for jerk marinade that I’ve come up with. I mix it all in the food processor and then add it to the chicken and let marinate overnight. This recipe has 2 habaneros in it so be careful, its spicy!

  1. Grill chicken
  2. Make vinaigrette
  3. Assemble salad
  4. Devour entire salad

Additional Options

I love the pineapple in this recipe, but I believe mango would work nicely in this as well. Heck, go ahead and put them both in it!

If you’re trying to make this keto/low carb, then omit the honey in the dressing but don’t remove the fruit from this recipe. The pineapple is an important ingredient in my opinion. Stevia can be used as a sweetener for the dressing.

Chicken thighs are also another great option, and they are much cheaper than chicken breasts. Similarly, topping this salad with spicy jerk shrimp would be delicious too!

Ingredients
  

  • 2 cups romaine lettuce chopped
  • 1 cup cabbage finely chopped
  • ½ cup pineapple diced
  • 2 tbsp red bell pepper diced
  • ¼ cup cucumber sliced
  • 1 avocado sliced
  • 1 stalk green onion sliced thin
  • ¼ cup shredded carrots
  • ½ lb jerk chicken breast sliced or chopped. See recipe
  • cilantro diced
  • 3-4 tbsp honey lime vinaigrette see recipe below

Honey Lime Vinaigrette

  • ½ Lime
  • 1 tsp white wine vinegar
  • 1 tsp Honey or Agave
  • 1 tsp Dijon mustard
  • 2 tbsp MCT oil or Olive oil extra virgin
  • pinch salt
  • pinch pepper
  • pinch garlic powder

Instructions
 

Jerk Chicken

  • Heat grill to 450. Season chicken breast liberally with jerk seasoning and grill until 165 degrees in widest piece. Let rest
    ½ lb jerk chicken breast

Chopped Salad

  • Wash and dry vegetables. Chop lettuce and cabbage, add to bowl.
    1 cup cabbage, 2 cups romaine lettuce
  • Chop red bell pepper, green onion, cucumber, carrots and pineapple then add to bowl. Mix well. Top with sliced avocado and sliced jerk chicken. Garnish with cilantro. Top with vinaigrette.
    ½ cup pineapple, 2 tbsp red bell pepper, ¼ cup cucumber, 1 avocado, 1 stalk green onion, ¼ cup shredded carrots, ½ lb jerk chicken breast

Honey Lime Vinaigrette

  • In a small bowl whisk the juice of 1/2 lime (1TBSP). Add 1 TSP honey, 1 TSP Dijon mustard, vinegar, pinch of salt and pepper, pinch of garlic powder and 2 TBSP MCT oil or EVOO.
    3-4 tbsp honey lime vinaigrette
