Honey Lime Vinaigrette
½Lime
1tspwhite wine vinegar
1tspHoney or Agave
1tspDijon mustard
2tbspMCT oil or Olive oilextra virgin

Instructions
Jerk Chicken
Heat grill to 450. Season chicken breast liberally with jerk seasoning and grill until 165 degrees in widest piece. Let rest

Chopped Salad
Wash and dry vegetables. Chop lettuce and cabbage, add to bowl.
1 cup cabbage, 2 cups romaine lettuce
Chop red bell pepper, green onion, cucumber, carrots and pineapple then add to bowl. Mix well. Top with sliced avocado and sliced jerk chicken. Garnish with cilantro. Top with vinaigrette.

Honey Lime Vinaigrette
In a small bowl whisk the juice of 1/2 lime (1TBSP). Add 1 TSP honey, 1 TSP Dijon mustard, vinegar, pinch of salt and pepper, pinch of garlic powder and 2 TBSP MCT oil or EVOO.
