Chicken bacon ranch casserole is the perfect weeknight meal. It’s simple to make and on your dinner table in less than 30 minutes.
I admit it, I love a good old chicken bacon ranch pizza! Sadly, as delicious as it is it’s also terribly unhealthy. I try to limit my carb intake because it makes my gut happier. This Panda has IBS and too many carbs along with other factors will make my tummy angry. However, this keto chicken bacon ranch casserole makes my belly happy and full. You will definitely enjoy this chicken bacon ranch casserole recipe if you are following a keto or low carb diet.
This recipe is very versatile because different vegetables can be added to make it healthier. It’s also a good way to get the kiddos and adults to eat their vegetables. Because everyone likes they’re veggies smothered in ranch dressing. Right?
I make my own buttermilk ranch dressing and dip because I like to be able to control the amount of sugar that’s added to my food. Plus, its good, like really good. Store bought ranch dressing works fine here, as well, just make sure its keto approved if you’re following that diet.
Add some quick pickled onions on top just before serving to add an extra element to this dish.
How to make chicken bacon ranch casserole
I buy a store-bought rotisserie chicken for this, and I always have pre-cooked bacon in the fridge for quick breakfasts. I’ve seen pre-cooked bacon in the grocery store and I’m sure that would work fine here as well. Steam-in-bag broccoli or mixed vegetables makes this a quick recipe.
Shred up the chicken, steam the vegetables and add to a large mixing bowl along with bacon, ranch, garlic, green onion and seasonings. Spray a casserole dish with cooking spray and dump everything into it. Top with shredded cheese of your choice, I prefer cheddar or Colby jack. Since everything is already cooked, you will only need to put it in the oven for about 10-15 mins to melt the cheese and get everything warmed up.
Options
- use different vegetables (green beans, cauliflower, peas, carrots)
- add diced ham
- add quick pickled onions
- add roasted potatoes (non-keto/low carb)
- add jalapenos/cream cheese (jalapeno popper casserole!)
- switch bacon for sausage/kielbasa
- add cooked pasta (chicken bacon ranch pasta) non-keto
- dump it on top of a pizza dough (chicken bacon ranch pizza) non-keto
If you decide to put this on a pizza dough, then the dough will need to pre-cook. Follow package instructions. I would also add the ranch to the crust using less than what’s in the recipe. Additionally, the amount of the ingredients would need to be lowered so you don’t have a pizza disaster on your plate.
If you want to go the chicken bacon ranch pasta route, I suggest a larger type of pasta like a ziti or bowtie. Gluten free pasta can definitely be used if you are following that diet. Cook the pasta to al-dente (2 minutes less than time on box) since it will cook in oven for 10 minutes.
To make this into a loaded baked potato casserole you will need to roast diced potatoes first (with olive oil and salt/pepper). Roast in the oven for 20-25 mins on 425 degrees. Then add to the mix. This will obviously alter the total cook time of the recipe.

CHICKEN BACON RANCH CASSEROLE
Ingredients
- 1 whole Rotisserie chicken shredded, diced
- 2 cups Broccoli chopped. 2 stalks
- 5 slices Bacon (any kind) can use pre-cooked chopped
- 3/4 cup Ranch Dressing (homemade)
- 1 cup Shredded cheese
- 1-2 clove Garlic
- 2 whole Green onion
- 1/4 tsp cayenne pepper
- salt
- pepper
Instructions
- Pre-heat oven to 350
- Cook bacon according to package if not using pre-cooked. Drain on paper towel. Once cooled, cut into bite sized pieces. Set aside
- Cook Broccoli until almost done. Steam for 8 mins or cook in microwave, covered, with 2 Tbsp of water for 2 mins. Set aside
- Shred all of the meat from rotisserie chicken (white and dark). Chop into bite size pieces. Add to large mixing bowl. Add remaining ingredients, except the shredded cheese, to bowl and stir.
- Spray casserole dish with cooking spray ( I use coconut or olive oil spray). Dump everything from mixing bowl into casserole dish and then top with shredded cheese.
- Cook in 350-degree oven for 10-15 mins
