Try this delicious, low carb casserole tonight. This recipe is very versitile and its super easy to make. Keto friendly and very filling. Add additional vegetables if you would like. This would be great with cauliflower as well
Cook bacon according to package if not using pre-cooked. Drain on paper towel. Once cooled, cut into bite sized pieces. Set aside
Cook Broccoli until almost done. Steam for 8 mins or cook in microwave, covered, with 2 Tbsp of water for 2 mins. Set aside
Shred all of the meat from rotisserie chicken (white and dark). Chop into bite size pieces. Add to large mixing bowl. Add remaining ingredients, except the shredded cheese, to bowl and stir.
Spray casserole dish with cooking spray ( I use coconut or olive oil spray). Dump everything from mixing bowl into casserole dish and then top with shredded cheese.
