The leftovers go fast when I make this blueberry banana bread recipe. This recipe is adapted from my chocolate chip banana bread recipe. I simply replace 1 of the bananas for one half cup of juicy ripe blueberries. The outcome is a delicious, sweet and moist bread that is absolutely perfect for breakfast or anytime you need a little snack.
Ingredients
- Butter
- Sugar
- Egg
- Vanilla
- Blueberries
- Bananas
- Flour
- Baking soda
- Baking powder
- Salt, cinnamon, nutmeg
Preparation
In preparation of this delicious blueberry bread, you will need to set out a stick of butter so it can come to room temperature. This will take a couple of hours, or you can let it sit out overnight. You can also let the eggs come to room temperature during this time. Adding cold eggs to a bowl of tap water will bring them to room temperature a little quicker.
Room temperature eggs are required when baking because the egg yolk will blend more easily. Also, if you add cold eggs to room temperature butter the fat will re-harden and the mixture wont blend well.
This is the hand mixer I use to make the batter. A stand mixer is also a great option, this ones on my wish list.
The butter and sugar will need to be creamed together before adding the eggs and vanilla. I mix all of the dry ingredients into a separate bowl and then add it to the wet mixture slowly. The bananas and blueberries go in last and then pop it in the oven for almost an hour. Oven times vary, the blueberry bread will be done when you stick a knife through the middle, and it comes out clean.
Options
This blueberry bread recipe can be made with fresh or frozen blueberries. You can also swap out the blueberries for raspberries, strawberries or blackberries. Or omit the blueberries altogether and then it’s back to banana bread. Add chocolate chips and its chocolate chip banana bread.
If you are watching your added sugars, then you can try making this with erythritol like the Swerve brand. This will not eliminate all the sugars though because there is sugar in the fruits.
Pecans or walnuts would definitely be a great addition to this bread too.

- 1 Hand or stand mixer
Ingredients
- 8 tbsp Butter 1 stick
- 1 cup Sugar
- 2 Egg
- 1 tsp Vanilla extract
- 2 cup Flour all purpose
- 1 tsp Salt
- 1 tsp Baking soda
- 1 tsp Baking powder
- 1 tsp Cinnamon ground
- ¼ tsp Nutmeg ground
- 2 Banana mashed
- ½ cup Blueberries
Instructions
- Preheat oven to 350 F
- In a large bowl combine all dry ingredients and set aside.2 cup Flour, 1 tsp Salt, 1 tsp Baking soda, 1 tsp Baking powder, 1 tsp Cinnamon, ¼ tsp Nutmeg
- In a large bowl, using a hand or stand mixer, cream the butter and sugar. Then add the egg and vanilla and mix to combine.8 tbsp Butter, 1 cup Sugar, 2 Egg, 1 tsp Vanilla extract
- Slowly add the dry ingredients to the wet ingredients ½ cup at a time until well incorporated.
- Fold in the bananas and blueberries to the batter.½ cup Blueberries, 2 Banana
- Grease and flour the bottom and sides of a loaf pan, shaking off excess flour.
- Pour the batter into loaf pan and bake in 350-degree F oven for 50-60 minutes
