Creamy cheesy southern grits topped with sausage, eggs and crispy potatoes will make you yearn for this grit breakfast bowl.
We eat breakfast bowls a lot around this house. I make a batch of oven roasted potatoes and/or slow southern grits on Sunday so we can use them throughout the week for quick breakfasts. I also cook up a good bit of bacon or sausage so we can use it in egg scrambles or breakfast bowls. All you have to do is assemble your bowl and pop it in the microwave while your egg is frying up. Easy peasy!
Breakfast bowl ideas
These grit breakfast bowls are just so versatile. Cook your eggs any way you like, scrambled or fried eggs work great in this recipe. You could use turkey or plant-based sausage to lower the fat content. To make this vegetarian try using the Just Egg plant-based egg substitute. I have tried it and its pretty tasty.
Additionally, I’ve used tater tots instead of grits as well as crispy oven roasted potatoes as the base. You can totally get creative here. My fried chicken tenders would make a great topping on this bowl. Add vegetables if you like, sauteed kale would make a healthy addition or top with my salsa verde or red salsa. Smother it with my sausage gravy recipe, be a mad scientist, it’s alllll good!
Down to the nitty gritty of grits
What exactly is a grit, you ask? Its corn. Grits are made from ground dent corn and come in many different colors and varieties. They were originally consumed by Native Americans and are a heavy staple in Southern cuisine. Grits are very affordable, and a small amount will go a long way. I find that they are delicious leftover and can be made sweet or savory.
Grits are high in iron and folate. They contain powerful antioxidants, and they include many B vitamins. Stone ground grits have more nutritional value than quick or instant grits due to less processing.

Recently my mother introduced me to stone ground grits and WOW, they really are worth the effort. Be forewarned, they take 35-45 minutes to make. I pick mine up at our local farmer’s market. Just remember to rinse them well (3x) before you cook them, or until the water runs clear. If you are crunched for time or just don’t feel like waiting 45 minutes for your grits to cook, then quick cooking grits will work just fine.
Simple Bowl assembly
Making this grit breakfast bowl is so simple. And we need simple in the morning! I just put my grits on the bottom of my bowl and then start building upwards. Sausage, eggs, potatoes and cheese get piled high. The crunchy potatoes give the bowl such a great texture. You might also try topping this bowl with fried chicken tenders and sausage gravy. GRIT BREAKFAST BOWL
Ingredients
- ½ cup grits cooked
- 2 oz sausage cooked, crumbled
- 1 egg
- ½ cup potatoes oven roasted
- 2 oz cheddar cheese shredded
Instructions
- Preheat oven to 450. Clean and dry potato. Cut potato into cubes and place on a cookie sheet. Spray with cooking spray and liberally add salt and pepper. Cook for 15-20 minutes or until desired crispiness.½ cup potatoes
- Cook grits according to package directions. Add salt, pepper and shredded cheese when done½ cup grits, 2 oz cheddar cheese
- Brown sausage in skillet while the grits are cooking.2 oz sausage
- Fry or scramble your egg and top with shredded cheese.1 egg, 2 oz cheddar cheese
- Assemble bowl with grits on the bottom, top with crispy potatoes.½ cup potatoes, ½ cup grits
