Creamy cheesy grits topped with sausage, crispy potatoes and a fried egg. Breakfast doesn't get any better than this. Switch out the sausage with bacon or ham and scramble your egg to make it your way. This will have you full for hours.
Preheat oven to 450. Clean and dry potato. Cut potato into cubes and place on a cookie sheet. Spray with cooking spray and liberally add salt and pepper. Cook for 15-20 minutes or until desired crispiness.

Cook grits according to package directions. Add salt, pepper and shredded cheese when done

Brown sausage in skillet while the grits are cooking.

Fry or scramble your egg and top with shredded cheese.
1 egg, 2 oz cheddar cheese
Assemble bowl with grits on the bottom, top with crispy potatoes.
