This Korean beef bowl recipe produces a sweet and mildly spicy dish that cooks in less than 30 minutes. This translates into an easy weeknight meal.

7 ingredients are all you need to make this simple Korean beef bowl recipe. This is perfect for those nights when your short on time and energy. Who doesn’t like quick, fast, delicious meals? No one except maybe weirdos. Just saying.

I love making this Korean beef bowl because I can add whatever I want to it. Sometimes I add white rice, Asian slaw, Kimchi, sliced radishes, pickled onions, scallions, avocado, sesame seeds and gochugaru. Consequently, the flavors and textures in this meal are insane, but in a good way. This dish makes my mouth very happy!

Just make these quick pickled red onions before you start browning the beef and they will be ready when it’s time to construct the Korean beef bowl. They are a total gamechanger!

Keto/Low carb options for Korean beef

Easily adjust this recipe to fit a Keto or low carb diet. By replacing some of the ingredients with keto friendly substitutes you can enjoy this with less guilt. For example, cauliflower rice would be great with this dish or use the Korean beef as a filling for lettuce wraps. Korean beef salad would be another option to try here as well.

If you are going the low carb/keto route then you will need to use a sugar substitute, such as, Swerve, Monk fruit, Stevia or Truvia sweetener. Swerve measures out the same as regular sugar plus they offer a brown sugar (sugar-free) sweetener. Additionally, I would omit the gojuchang as it has added sugars and substitute red pepper flakes, or a chili paste like Sambol oelek.

Instructions

First of all, if you are making homemade pickled onions, then get those started. Second, if you are having rice with this dish then get that going since it usually takes 20 minutes.

Whisk all ingredients except beef, in a small bowl and set aside. From here all you need to do is brown the ground beef and drain extra liquid off, if any. Add the sauce mixture to cooked beef and simmer on low for a few minutes to incorporate flavors. Easy peasy!

Next you will assemble your Korean beef bowl, Korean beef lettuce wrap or Korean beef salad with any toppings you like.

Gochugaru vs Gojuchang?

Gojuchang is a traditional Korean red chili paste that has been fermented. It has a sweet and spicy flavor and is considered a condiment. There is sugar in this condiment so omit it if you are making this Korean beef recipe keto. Use a chili paste like Sambol oelek or just add red pepper flakes to the sauce.

Gochugaru is a dry spice blend made from crushed chili flakes and sun-dried peppers. It’s spicy and is used in many Korean dishes, such as, kimchi, cucumber salad and as a topping on finished dishes.

Both of these ingredients go well in this Korean beef bowl. The gochugaru sprinkled on top gives off a spicy crunch while the gojuchang in the sauce adds a sweet and fiery kick.

Korean beef is ground beef simmered in a sweet and mildly spicy sauce. This recipe can easily be adapted to be Keto/low carb friendly. Use as a topping with any type of rice you like or use as a filling for a lettuce wrap. Top with green onions, radishes, pickled onions, sesame seeds or gochugaru.

Ingredients
  

  • 1 lb ground beef lean
  • ¼ cup Soy sauce, Tamari or Coconut aminos
  • 2 tbsp Brown sugar, Swerve (brown sugar) or Monk fruit
  • 1 tbsp Ginger
  • 2 clove Garlic
  • 1 tbsp Gojuchang omit for Keto and use red pepper flakes
  • 1 tbsp Sesame oil
  • Radish, Green onions, Gochugaru, pickled onions, sesame seeds optional toppings

Instructions
 

  • Whisk all ingredients, except beef, in a small bowl and set aside.
  • In a skillet (preferably cast iron) sauté ground beef until cooked through. Drain excess liquid, if any.
  • Add sauce to ground beef and simmer for 5-10 minutes.
