This simple pineapple vinaigrette recipe takes less than 5 minutes to make in the food processor. If you don’t have a food processor on hand you can substitute a can of crushed pineapple or even use juice.
This sweet vinaigrette is perfect on a summer salad with fruits. I made this dressing originally for my coconut shrimp salad, but I also use it alongside coconut shrimp or coconut chicken as a dipping sauce. Adding a small amount of cold water will thin it out if that’s what you like. Its sweet and tangy and quite delicious!
This is the food processor I have, and it works great for dressings and sauces. It gets a lot of use in this house.


Ingredients for pineapple vinaigrette
- Pineapple
- Cilantro
- Dijon mustard
- White wine vinegar
- Olive oil (extra virgin)
All of the ingredients go into the food processor and then give it a whiz for 20-30 seconds. It’s just that simple!

PINEAPPLE VINAIGRETTE
Equipment
- 1 Food processor
Ingredients
- ½ cup Pineapple
- 1 tbsp White wine vinegar
- 1 tbsp Dijon mustard
- 1 tbsp Olive oil extra virgin
- 1 tbsp Cilantro
Instructions
- Place all ingredients into a small food processor and chop for 30 seconds. Can add water to thin dressing out more.
