This tasty pistachio pound cake or pistachio bread recipe makes 2 loaves, so it is totally shareable and it’s very easy to make. I especially love the green color to it, and it requires very few ingredients. Plus, its ready in an hour or less!
I call this a pound cake, but I like to serve it as a pistachio bread. I sprinkle pistachios on top of it and leave out a frosting. With that being said, a cream cheese icing or a glaze would be amazing on it.
Is this pistachio pound cake/ pistachio bread healthy? Not really, but we should all indulge every once in a while. Plus, it’s great for work parties or potlucks!
I find that this pound cake is also quite heavenly with a cup of coffee, and I have enjoyed it for breakfast a time or two.
You can use 2 loaf pans, 2 cake pans or even a Bundt cake pan to make this recipe. Cooking times will vary according to the pan used for this delicious cake.
Ingredients
- Yellow cake mix
- Pistachio pudding, dry mix (2 boxes)
- Eggs
- Sour cream
- Water
- Vegetable oil
- Cinnamon sugar
Healthier options
- Substituting light sour cream for the regular sour cream in this recipe will decrease the fat a little bit.
- Use a sugar free yellow cake mix.
- Use sugar free pistachio pudding mix.
Instructions
- Preheat oven to 350 degrees.
- Prepare the loaf pans by spraying with nonstick spray and then sprinkling the cinnamon sugar onto the bottom of the pans.
- Mix all of the ingredients together.
- Bake for 45 mins to 1 hour. Stick a knife into the center of the cake and if there’s batter stuck to it than it needs to bake a little longer.

PISTACHIO POUND CAKE
Ingredients
- 1 box Yellow cake mix
- 2 boxes Pistachio pudding mix 3.4 oz boxes
- 4 Eggs
- ¼ cup Vegetable oil
- 2 tbsp Water
- 1 cup Sour cream
- 2 tbsp Cinnamon sugar
Instructions
- Preheat oven to 350 °F
- In a large bowl, mix the cake mix, dry pudding mix, eggs, oil, water and sour cream. Blend well using a mixer or by hand (preferred).
- Grease your Bundt pan, cake pans (2) or loaf pans (2). Spinkle the cinnamon sugar on the bottom of the pans, evenly.
- Pour the batter into the pan (or pans, evenly) and bake for 45 minutes or until a knife inserted in the middle of the cake comes out clean.
- Let cool. Slice and enjoy!
