PUMPKIN PIE BAKED OATMEAL

This recipe for pumpkin baked oatmeal is healthy, hearty and great for meal prepping. Top it with yogurt, whipped cream or honey for a satisfying breakfast.

Ingredients
  

  • 2 cups Rolled oats
  • ¼ cup Sugar Swerve, Monk fruit, sugar
  • 1 tsp Baking powder
  • 1 tsp Pumpkin pie spice
  • ½ tsp Salt
  • 1 tbsp Chia seeds optional
  • 1 tbsp Coconut flakes optional
  • 2 each Eggs whisked
  • 1 cup Milk product unsweetened
  • 1 tsp Vanilla extract
  • 1 cup Pumpkin puree
  • 3 tbsp Pepitas topping
  • 3 tbsp Walnuts/Pecans topping

Instructions
 

  • Preheat oven to 350 degrees F. Spray 9x9 baking dish with cooking spray.
  • In a large bowl, combine dry ingredients and mix.
    In a medium bowl combine the wet ingredients and whisk to combine.
  • Add the wet ingredients to the dry ingredients and stir well to combine. Pour into greased baking dish. Top with pepitas and nuts.
  • Bake, uncovered, in oven for 40-50 minutes or until a knife comes out clean when stuck into the middle of the oatmeal.
