PUMPKIN PIE BAKED OATMEAL

- 2 cups Rolled oats
- ¼ cup Sugar Swerve, Monk fruit, sugar
- 1 tsp Baking powder
- 1 tsp Pumpkin pie spice
- ½ tsp Salt
- 1 tbsp Chia seeds optional
- 1 tbsp Coconut flakes optional
- 2 each Eggs whisked
- 1 cup Milk product unsweetened
- 1 tsp Vanilla extract
- 1 cup Pumpkin puree
- 3 tbsp Pepitas topping
- 3 tbsp Walnuts/Pecans topping
Preheat oven to 350 degrees F. Spray 9x9 baking dish with cooking spray.
In a large bowl, combine dry ingredients and mix.In a medium bowl combine the wet ingredients and whisk to combine. Add the wet ingredients to the dry ingredients and stir well to combine. Pour into greased baking dish. Top with pepitas and nuts.
Bake, uncovered, in oven for 40-50 minutes or until a knife comes out clean when stuck into the middle of the oatmeal.
