Nothing says summer vacation quite like the mojito. In case you don’t know what a Mojito is, it’s a rum-based cocktail with club soda, lime and copious amounts of mint.
The first time I encountered a mojito was in St Tropez. My mother and I embarked on a weeklong Mediterranean cruise and the first stop the boat made was there. After walking around all day and seeing some of the sites we stopped at a small cafe overlooking the sea. It was stunningly beautiful! We ordered lunch and I tried my first mojito, I was hooked.
The Mojito is a simple and herbaceous libation that’s sweet but not too sweet and strong but not too strong. Catch my drift? It’s not a drink that I want when I’m sitting inside a windowless building. I want to enjoy this deliciousness while lounging outside, near a body of water preferably, in another state or country. Sadly, I don’t get to go to those places too often and I planted some mint in my garden this spring which means I’m making backyard mojitos. Mint grows fast y’all.
Tips to make a perfect Mojito
I make my own simple syrup for my liquid adult refreshments. A simple syrup is equal parts sugar to water, simmered to incorporate and then cooled. It keeps for about a month when stored in the refrigerator. Sugar, agave or honey can be used in place of the simple syrup, start with 1 tbsp and add more until you reach your desired sweetness. For keto/low carb a sugar-free alternative sweetener can be used in this recipe.
Muddling the mint leaves is a very necessary step in making mojitos as it releases the oils from the mint and enhances the flavor. Do not skip this step! Muddle the lime while you’re at it. I currently do not own a muddler. I use the handle of my wooden spoon to muddle the mint leaves, but you can buy one here if you would like.
Mojito Ingredients
- 10-15 Mint leaves (2 sprigs)
- White rum (1.5 oz)
- Lime (1/2)
- Club soda (5 oz)
- Simple syrup (1 oz)
- Ice
Raspberry mojitos are made by incorporating raspberry puree to the glass. To make the puree you just toss some berries into your food processor with a tsp of water and blend until smooth. Strain the seeds out if you like and add as much puree to your drink as you want. Blackberry mojitos and blueberry mojitos are made in the same fashion.
The type of rum used in a mojito recipe matters. White rum is what you will need. Do not use spiced rum or dark rum in this recipe.
I don’t make my drinks very strong so if you feel that this recipe needs more rum then go for it! Just make sure you’re sitting somewhere outside when you enjoy this cocktail, it makes it taste even better.

THE MOJITO
Ingredients
- 1.5 oz White rum
- 1 oz Simple syrup
- ½ oz Lime juice & lime about 1/2 lime
- 2 sprigs Fresh mint leaves
- 5 oz Club soda
- Ice
- Fruit puree (opt) see note
Instructions
- Add mint leaves, lime juice and lime to the bottom of a glass
- Using a muddler or the handle of a wooden spoon smash (muddle) the ingredients for a minute to release the flavors.
- Add rum, simple syrup, fruit puree (if using) and club soda. Mix well. Top with ice
