BUFFALO CHICKEN LETTUCE WRAPS

These buffalo chicken lettuce wraps can be made in 15 minutes so when I say they're simple, I'm speaking the truth! 100% keto and low carb diet friendly too.

Ingredients
  

  • 2 cups Shredded chicken about 3/4 lb
  • 1 tbsp Olive oil
  • 1 head Iceberg lettuce
  • ¼ cup Shredded carrots
  • ¼ cup Buffalo wing sauce
  • Cheese feta, blue cheese, mozzarella
  • Ranch dressing or blue cheese dressing
  • 1 tsp Cumin
  • 1 tsp Coriander

Instructions
 

  • In a large skillet add 1 tbsp olive oil and shredded chicken, sauté for 3 minutes.
  • Add cumin and coriander, sauté for 1 minute.
  • Add carrots and buffalo wing sauce and let simmer for 5 mins or more.
  • Cut head of lettuce in half and pull off a couple of pieces. Place chicken filling in lettuce and top with cheese and dressing.
