CAPRESE CHICKEN
Baked chicken topped with vine-ripe tomatoes, basil and melted mozzarella cheese topped with a balsamic glaze. This meal comes together in 30 minutes and requires only 6 ingredients!

- 1 lb Chicken Breasts thin sliced
- 3 large Tomatoes sliced
- 1 bunch Basil
- ½ cup Balsamic vinegar or balsamic glaze
- 1 cup Mozzarella
- ¼ cup Parmesan cheese (opt)
- 3 tbsp Italian seasoning see note
- salt/pepper
- 1 tbsp oil grapeseed, olive, canola
Preheat oven to 375 degrees
If using whole chicken breasts, slice in half, from the side. You want 4 thin chicken breasts. Season both sides with Italian seasoning and salt/pepper.
Heat a skillet (preferably) cast iron on medium heat and add cooking oil. Cook chicken breasts 3-5 mins per side.
Top chicken with sliced tomatoes, basil and then cheeses. Cook 10-15 minutes in oven or until internal temperature of chicken is 165 degrees.
While chicken is in oven make homemade balsamic glaze by heating balsamic vinegar in a small saucepan over medium heat. Stir continuously until it's reduced by half and has a thick consistency.
Broil chicken for 1-2 mins to brown the cheese.
Drizzle chicken breast with balsamic glaze and serve.
If you don't have Italian seasoning mix you can make your own by mixing 1 tbsp each dried oregano, dried thyme, and dried parsley to 1 tsp garlic powder and dried rosemary.
