CREAM OF ZUCCHINI SOUP

- 2 each Zucchini large, diced
- 1 Shallot diced
- 3 clove Garlic minced
- 1 tbsp Curry powder
- 3 cup Chicken broth
- 2-3 tbsp Heavy whipping cream see note
- Salt/Pepper to taste
- 1 tbsp Olive oil
Dice zucchini and shallot and add to a large pot in 1 tbsp olive oil, sauté on medium heat for 5 minutes. Add garlic and curry powder, sauté 1 minute.
2 each Zucchini, 1 Shallot, 3 clove Garlic, 1 tbsp Curry powder, 1 tbsp Olive oil
Add chicken broth and reduce temperature to low. Place lid on pot and simmer for 20 minutes.

Using an immersion blender, blend soup until smooth.
Add heavy cream and salt/pepper, stir to combine.
2-3 tbsp Heavy whipping cream, Salt/Pepper
Milk or half and half can be used instead of the heavy whipping cream. This will lower the fat total in this dish. Use the same amount called for in recipe.
