GERMAN POTATO SALAD

This is not your ordinary potato salad. This tangy potato salad has vinegar and bacon in it and is best served warm.

Ingredients
  

  • ½ lb Bacon diced
  • 1 medium Shallot diced
  • 2 tbsp Flour
  • 2 tbsp Sugar
  • 1 tsp Celery salt
  • ½ cup White vinegar distilled
  • 1 cup Water
  • 4-5 each Russet potatoes thick diced
  • Salt/pepper to taste

Instructions
 

  • In a skillet on medium-low heat, sauté the bacon until cooked.
    ½ lb Bacon
  • Remove excess bacon grease leaving 1 tbsp of grease in the pan. Add shallot to the bacon grease and sauté 1 minute.
    1 medium Shallot
  • Add flour, sugar, celery salt, vinegar and water. Cook until it becomes thick and bubbly.
    2 tbsp Flour, 2 tbsp Sugar, 1 tsp Celery salt, ½ cup White vinegar, 1 cup Water
  • Add diced potatoes, stir to combine and place lid on skillet. Simmer on med-low heat until potatoes are fork tender. About 20 minutes.
    4-5 each Russet potatoes
  • Add salt and pepper to taste and crumble cooked bacon on top just before serving.
    Salt/pepper, ½ lb Bacon
