This is a healthy and easy soup recipe that takes 30 minutes to make. Customize the recipe to what you like in terms of vegetables and spicy level. Use vegetarian wontons and veggie broth to keep it vegan or add cooked chicken and chicken wontons to increase the amount of protein. Substitute gluten free wontons for a GF soup option.

2-3Mushrooms (baby portobellos)sliced
20 Mini wontons or 10 dumplingsfrozen

Instructions
In a large pot saute scallion and bok choy in 1 tbsp of cooking oil (or butter) for 5 minutes over medium heat. Add garlic and ginger and saute for 1 minute.
Add broth and mushrooms and bring to a boil. Reduce heat to low and simmer, covered, for 15 minutes.
Add the wontons and spices (red pepper flakes, salt and white pepper) and simmer for 5 minutes. Taste to adjust seasonings.
