MASHED CAULIFLOWER

Whip up this creamy keto/low carb side dish in no time. This pairs well with steak or chicken and can definitely stand up all on its own. Any type of dairy or nondairy product can be used in this recipe.

Ingredients
  

  • 1 head cauliflower 2 cups
  • 2 oz cream cheese, sour cream, yogurt, cottage cheese, milk
  • 3/4 cup shredded cheese cheddar, Colby jack
  • salt
  • pepper
  • 1 tbsp garlic paste (opt) see note
  • bacon bits (opt)

Instructions
 

  • Chop cauliflower into small pieces, removing tough inner stem from head of cauliflower. Add cauliflower to a large pot and cover with water. Boil for 20 minutes or until fork tender.

  • Drain cauliflower into a colander and add back to pot or large bowl. Mash cauliflower and add cream cheese, garlic puree, salt, pepper and half of shredded cheese. Mix well

  • Top with additional shredded cheese and bacon

To make garlic paste and garlic oil.  Simmer on low heat, 5 garlic cloves (peeled) in 1/2 cup olive oil for about 15 mins or until soft and lightly gold in color.  Strain garlic oil into airtight container and refrigerate for 4 days.  Use in salad dressings or to sauté veggies.  In a small bowl smash garlic and use in 3-4 days.
