SWEET VINEGAR SLAW
This sweet and tangy cole slaw is a great side dish to many meals. It goes great with BBQ or use as a topping on tacos or Korean beef.

- 3 cups Slaw mix see note
- 3 tbsp Apple Cider Vinegar
- 1 tbsp Dijon mustard
- 1 tsp Mayonnaise or Greek yogurt
- 1½ tsp Maple syrup, agave or honey
- ½ tsp Celery seeds
- 3 tbsp Olive oil extra virgin
Whisk all ingredients, except for the slaw, in a small bowl.
Add sauce to Cole slaw mix and refrigerate for at least 30 minutes.
Make you own Cole slaw mix by thinly shredded green cabbage, purple cabbage and carrots at a ratio of 3:2:1. Additions like thinly sliced green onion and fresh herbs (cilantro/parsley) are great too.
