Peel, devein and clean shrimp. Season with salt and pepper. Sauté on medium heat in 1 tbsp olive oil 2 minutes per side or until browned but not cooked through. Set aside
1 tbsp Olive oil, 1 lb Shrimp, deveined
Cook pasta "al dente" according to package instructions. Drain and set aside in small amount of cooking liquid.
1 lb. Linguini or Angel hair pasta
In same pan as shrimp add shallots, cook 3 minutes. Add garlic, sundried tomatoes and cherry tomatoes, cook 1 minute.
¼ cup Shallot, 4 clove Garlic, ¼ cup Sundried tomatoes, ⅓ cup Cherry tomatoes
Add wine to pan and let simmer for 2-3 minutes to burn off alcohol.
¼ cup White wine (dry)
Add heavy cream and spices. Simmer on low for5-6 minutes.
2 cup Heavy cream, 1 tsp Red pepper flakes, ½ tsp Basil, ½ tsp Oregano, 1 tsp Salt, ½ tsp Black pepper
Add spinach and cook until wilted then add pasta and parmesan cheese. Mix thoroughly and top with parsley as garnish.
