This is a moist pumpkin bread with white chocolate chips mixed in. Your house will smell heavenly while its baking in the oven! Drizzle cream cheese icing on top to increase its decadence.
8tbspUnsalted Butter (1 stick)Room temperature
1cupSugargranulated
2eachEggRoom temperature
1tspVanilla extract
15ozPumpkin puree
2tbspWater (optional)
½cupWhite chocolate chips (optional)
Instructions
Add all of the dry ingredients into a medium bowl and mix well. Set aside.
2 cup Flour, 1 tsp Baking powder, 1 tsp Baking soda, 2 tsp Pumpkin pie spice, ½ tsp Salt
In a large bowl, cream the butter and sugar for 2 minutes. Add the eggs 1 at a time while mixing and then the vanilla. Add the pumpkin puree and blend well.
Slowly add 1/3 of the dry ingredients into the bowl of wet ingredients. Mix well and then add 1/3 more of the dry ingredients. Repeat this until the batter has formed. Add water if the batter is too dry.
Fold in the white chocolate chips and pour batter into prepared loaf pan. Bake for 1 hour and 10-15 minutes.
