This buffalo chicken lettuce wrap recipe is just so simple and yet so very tasty. It’s a buffalo wing wrapped in a handheld without all the messy bones. My husband and I love pretty much anything “buffalo chicken” so there’s never any leftovers when I make these.
This recipe is also great for meal prep because you just heat up the filling and stuff your lettuce with it the next day!
Thank the good lord for store-bought rotisserie chickens. Our poor parents had to actually cook the chicken before they could prepare an easy chicken-type dinner. Could you even imagine? In truth, I will sometimes cook chicken breasts in my crockpot for later use in dishes during the week. Most of the time, though, I buy the standard store-bought rotisserie chicken. Although after working all day, it’s just too darn convenient.
If you have any leftover chicken hanging out in the refrigerator, then you can use that too. Just make sure it’s not past 4-days old.

- Chicken (shredded)
- Lettuce (iceberg)
- Buffalo sauce (Sweet baby Rays or Franks)
- Shredded carrots
- Cheese (Mozzarella, Blue cheese, Feta, Cheddar)
- Ranch dressing/ Blue cheese dressing
- Cumin/coriander

I use low-cost iceberg lettuce for all my lettuce wrap recipes. I find that it holds up very well for hefty fillings, but you can use bibb or romaine as well.
How to make buffalo chicken lettuce wraps
For this lettuce wrap recipe you first need to shred up whatever kind of cooked chicken you have on hand. Then add it to a skillet with 1 tbsp oil. Sauté the chicken until it’s warmed through and add cumin and coriander. After a minute add the carrots and hot sauce of choice and cook until all of the flavors have incorporated. Add all this deliciousness to your pieces of lettuce and top with your cheese of choice and ranch/blue cheese dressing.
Yep, it’s that simple. Now go eat!
Gluten free
This is naturally gluten free but make sure that the rotisserie chicken that you purchase doesn’t have any added offenders to the seasoning. It may be safer to just prepare your own ground chicken or chicken breast and use that in this recipe.
Most of the Sweet Baby Rays sauces are gluten free and it will tell you on the packaging. Their Creamy buffalo dip sauce is GF and fantastic in this dish!

BUFFALO CHICKEN LETTUCE WRAPS
Ingredients
- 2 cups Shredded chicken about 3/4 lb
- 1 tbsp Olive oil
- 1 head Iceberg lettuce
- ¼ cup Shredded carrots
- ¼ cup Buffalo wing sauce
- Cheese feta, blue cheese, mozzarella
- Ranch dressing or blue cheese dressing
- 1 tsp Cumin
- 1 tsp Coriander
Instructions
- In a large skillet add 1 tbsp olive oil and shredded chicken, sauté for 3 minutes.
- Add cumin and coriander, sauté for 1 minute.
- Add carrots and buffalo wing sauce and let simmer for 5 mins or more.
- Cut head of lettuce in half and pull off a couple of pieces. Place chicken filling in lettuce and top with cheese and dressing.
