This baked caprese chicken recipe is perfect for when you need a delicious and filling meal on the table in 30 minutes. Plus, it only requires one pan and we all love a one-pan dinner. This is a low carb/keto meal that will leave you full for hours.

I like to serve my caprese chicken with a side of green beans or sauteed spinach which adds healthy carbs to this dinner. Chicken breasts or thighs can be used for this recipe, but it will affect nutritional values and cooking time.

I have found myself with an abundance of tomatoes lately. My mother grows her own tomatoes and ships a box or two full of them to me. I made this meal in hopes of using up the remainder of maters in my fridge just to find another box arriving. No complaints, I’m a very lucky lady! I see more caprese salad, fried green tomato BLTs and grilled cheese and tomato sandwiches in my future.

Ingredients

Caprese chick only requires 6 ingredients.

  • Chicken breast, sliced thin
  • Mozzarella cheese
  • Tomatoes
  • Basil
  • Balsamic vinegar
  • Italian seasoning

For this caprese chicken recipe, I like to use thin sliced chicken breast because they cook faster. If you have regular chicken breasts, then just slice them in half from the side. You can definitely use regular whole chicken breasts, but I would recommend doubling the cooking time.

This can also be made using skinless boneless chicken thighs, just make sure your chicken is cooked to 165 degrees internal temperature. This digital thermometer does the trick and I really like it.

Basil

Fresh basil is a must for this recipe. Do not use dry basil for this chicken caprese recipe. Basil is a flavorful herb that is a member of the mint family. Basil is delicate so I suggest buying it when you will need it. It doesn’t like to sit on my counter, and it doesn’t like the fridge. The leaves will brown easily therefore it must be kept at room temperature. Do not wash or cut basil until you are ready to use it. Keeping the leaves whole in this recipe helps maintain their color.

Balsamic glaze instructions

Pour balsamic vinegar into a small skillet on medium heat. Stirring constantly, let it come to a simmer for about 5 minutes. When the vinegar starts to thicken and reduce, the balsamic glaze is finished.

CAPRESE CHICKEN

Ingredients
  

  • 1 lb Chicken Breasts thin sliced
  • 3 large Tomatoes sliced
  • 1 bunch Basil
  • ½ cup Balsamic vinegar or balsamic glaze
  • 1 cup Mozzarella
  • ¼ cup Parmesan cheese (opt)
  • 3 tbsp Italian seasoning see note
  • salt/pepper
  • 1 tbsp oil grapeseed, olive, canola

Instructions
 

  • Preheat oven to 375 degrees
  • If using whole chicken breasts, slice in half, from the side. You want 4 thin chicken breasts. Season both sides with Italian seasoning and salt/pepper.
  • Heat a skillet (preferably) cast iron on medium heat and add cooking oil. Cook chicken breasts 3-5 mins per side.
  • Top chicken with sliced tomatoes, basil and then cheeses. Cook 10-15 minutes in oven or until internal temperature of chicken is 165 degrees.
  • While chicken is in oven make homemade balsamic glaze by heating balsamic vinegar in a small saucepan over medium heat. Stir continuously until it's reduced by half and has a thick consistency.
  • Broil chicken for 1-2 mins to brown the cheese.
  • Drizzle chicken breast with balsamic glaze and serve.

Notes

If you don’t have Italian seasoning mix you can make your own by mixing 1 tbsp each dried oregano, dried thyme, and dried parsley to 1 tsp garlic powder and dried rosemary.
