My broccoli and kale salad recipe makes for the perfect lunch during the fall when apples are in season. This is a hearty salad with a sweet crunch that I just cant get enough of!

I enjoy my broccoli kale salad with roasted chicken on top of it for added protein which keeps me full longer. Grilled salmon would be a nice addition to this salad as well.

The simple apple cider vinaigrette is made with just 5 ingredients and can be used on other salads like my summer berry salad, peach and blueberry salad or coconut shrimp salad. Just pop all of the ingredients into THIS and shake for a few seconds.

I have substituted pear for the apple in this broccoli kale salad recipe and it works nicely. Glazed walnuts, glazed pecans or almond slivers are interchangable in this recipe too.

Massaging the kale is a very important step in making any kale salad! Don’t leave this step out because it helps to tenderize the kale.

Ingredients

  • Broccoli
  • Kale
  • Apple
  • Craisins (low sugar)
  • Pepitas
  • Nuts
  • Vinaigrette

Instructions for broccoli kale salad

  1. De-stem and cut pre-washed kale into small pieces. Massage the kale for 1 minute by adding a small amount of olive oil onto hands and rubbing/squishing kale.
  2. Chop the broccoli into small pieces and add to a bowl. Add kale, pepitas, craisins and nuts.
  3. In a small bowl, whisk dressing ingredients and then pour onto salad.
  4. Toss salad and serve. Top with roasted chicken or salmon.

Ingredients
  

  • 2 cups Kale massaged
  • ¼ cup Broccoli diced
  • 2 tbsp Craisins low sugar
  • 1 tbsp Pepitas  salted
  • ½ Cup Apple/Pear diced
  • 1-2 tbsp Glazed walnuts or slivered almonds

Dressing

  • 2 tsp Olive oil extra virgin
  • 1 tsp Apple cider vinegar
  • 1 tsp Honey
  • 1 tsp Dijon mustard
  • dash Celery seeds

How to assemble salad

  • Stem and cut kale into small pieces. Add a small amount of olive oil onto your hands and massage kale for a minute. Add to salad bowl.
  • Cut broccoli into small pieces and add to bowl with kale. Add remaining ingredients.

How to make dressing

  • In a separate bowl, whisk together dressing ingredients. Add to salad and toss. Enjoy!
